This week we are joined by our very first distiller, Michael Craig of Goleta Red Distilling (@goletared distilling), to discuss the history of terroir and the role that it plays in craft distilling. We also talk about his experiences getting Goleta Red off the ground during a pandemic, the process behind crafting his line of spirits, and what new projects are coming soon!

Notre Dame de Namur
1 1/2 oz. Goodland Gin
1 oz. Jardesca Red Apertiva
2 dashes orange bitters
1 oz. Salad Days Pet Nat
Lemon twist
Combine all ingredients save the Pet Nat and lemon in a mixing glass with ice, and stir until well chilled, around twenty five seconds. Strain into a chilled coupe, and top with the Pet Nat. Express the lemon twist over the surface of the drink, and serve.
Joywave
3/4 oz. GoletAmaro
1 oz. Astral Pacifc Gin
1 oz. Malahat Spirits Rye Whiskey
1/4 oz. Orange Java Overproof Rum Liqueur
Combine all ingredients except for the orange twist in a mixing glass with ice, and stir until chilled. Strain into a chilled coupe glass. Express an lemon peel over the drink, and serve.
